Has anyone EVER seen or heard of a smoke or charcoal gray top for the 83-93s? I think a top the same color as the gray boot would look sharp on mine but it doesn't seem anyone ever made one, even custom.

Definitely not OEM. Only black, white and beige were OE. Beige was seldom ordered, and usually replaced with black later on.
Aftermarket top companies might have more option. I’ve seed red done, As well as some more “unique” colors and materials done

Funny thing is I looked at Electron Top website and they don't even have the original pinpoint vinyl material in any gray, I just find it odd that a gray top was never even a notion, while colors like beige and blue were offered.
