I'm sure this has been explained before, but what are the main differences between the different types of headers?

Anyone have any technical explanations of why which one is best or in what situations to use a certain type? Any input is appreciated, I am in the market for a pair and want to make sure I get the right kind.
Also, are all brands about the same? from what I have seen flowtechs are pretty cheap, or Macs are available on ebay for not much.
