Alright, I have another thread right now, it's under "Every time my 5.0 get's hot, I have no power...." It explains all the other crap that is pertinent to my car. Another friend suggested to me that the cats might be stopped up. But, I have been in cars with stopped up cats before and they got hot as hell and the engine never survived as long as mine has, if it is in fact the cats restricting it. So, my question is, is there another way, other than intense heat and smoke from the cats that they are stopped up? I have no way of telling, that is the only thing I know of.

an old method was to hook up a vac gauge. then hold the throttle real steady at like 2.5K or 3K rpm for 30 seconds or more. if the vac reading starts to diminish (while you are keeping the revs steady) that suggests an exhaust restriction. one would usually first troubleshoot the cats first, at that point.
some like to drill a small hole just in front of the cat (upstream) and run the car, noting if air is trying to pour out that hole (due to a restriction down the line).
