if i were in your situation, this is what id do
first, i wouldnt change a machone to a boss302 striping... just wouldnt do it
and im a restomod guy, i just like mach's better
2nd, id probably stick with the cleveland motor if you still have it - they can get you deep into the 13's easily
if that wasnt a viable option (cost?) then id go with the 397
more torque for a "heavier" car (heavier than an earlier model stang)
i would use those heads on the 397, as they would probably provide decent power and leave you with room to upgrade later
if you used those heads, id pick a smaller cam (less that .230 duration for sure)
and that would be a pretty quick car
