On a STOCk car, it's fine. With Al. heads, you are way too hot.
You should be below 200. If you have the stock radiator, you may want your next mod to be a FLuidyne and a $6 180* stat.
(or for now, a 180* stat and a good radiator flushing....that should help)

An aftermarket fan such as Flex-a-Lite will allow you to select the temp it will turn on and regulate at. It also has it's own coolant tempurature sensor that senses the water temp more accurately- which is at the radiator.
