It's Grilling Time! The Official Stangnet Grill/Smoke Thread

Ok, it’s going to be cold here this weekend (in the 30’s!). I’ve become such a vagina as I get older......

So I’m whimping out and will cook in the oven.

Anyhow, it’s Conference Championship Sunday coming up (go Chiefs!). I was thinking about doing the hot wings thing again since they turned out so well.

But then I thought, “How about a whole hot chicken?”. Or two......

So tonight I’m dry brining my fresh from the butcher shop chickens. I halved them and brined two of the halves with a kosher salt/poultry seasoning mix. The other two halves got a mix of kosher salt/spicy cajun seasoning.

They'll sit in the fridge till saturday afternoon, maybe sunday morning.

The ”hot chicken” will get a buffalo sauce coating during the cooking process, the other will be a more traditional roasted chicken.

I’ll let you know how it goes.
After a night of sleep, I’ve recovered some of my senses and decided I will be grilling these birds like a real man should! :fuss:

Ok, chicken tomorrow, salmon tonight.

I went to a place online called Maine Lobster so I could get fresh salmon. I want to eventually cook some King Salmon, but this is sockeye. King Salmon is pricey.

I‘m using a cedar plank that I soaked for a little over an hour in water and then toasted one side of it that the salmon would lay on.

I coated it with a homemade seasoning (you want a recipe, I‘ll send it to you). Then thinly sliced a lemon to add a little lemon essence.

It’ll cook for about fifteen minutes.

Sooooooo, the Super Bowl is coming up and my Chiefs FINALLY made it back!

I was a seven year old boy the last time we went to the Super Bowl. I’ve been a fan for all these years. I had a T-shirt that said, ”Just one more time before I die” with a Chiefs logo on it. It wore out a long time ago........

What is one to have to eat when one’s team can only get to the big game every fifty years?

It'll be king salmon filets for me and my boys! By accident! lol

I ordered some smoke salmon from a vendor in Alaska. Turns out it wasn’t in stock and they comped me with five pounds of fresh king salmon filets!

I‘ll get pictures and details as we get closer to the weekend.

Somebody got a package from Alaska today!

They ended up sending me a little over six pounds of king salmon filets!

What a freaking deal! I paid about half cost for this. They got a return customer with me. (Unless, of course, this salmon poisons me, then, no)

I bought a small bottle of white truffle olive oil too. It’s pricey crap as well. $21 for a little over three ounces.

I‘m going to try @Noobz347 ’s potato recipe. I’ll use that fancy smancy olive oil for them. I think those potato’s would be excellent with the salmon.

Once in a blue moon I would go to Anchorage and Eielson for various AF stuff and would come back with as much of that stuff as I could fit into:

I still have that bag. It's paid for itself many times over. :nice:

Try the flounder your next time out too! I watched these dudes bring them in off the boat:

Not :poo:. This is average! Cleaned, they're the size of those big wooden cable rolls for high voltage wire. Soooooo good.
