Manual steering not returning to center

I stored my 65 coupe all winter with jackstands on the frame with the suspension hanging. I installed new upper ball joints before dropping the car down and the steering wants to stay in the direction of the turn (not returning to center). Is it possible to over tighten the ball joint pivot?

nope, can't overtighten a ball joint. when it's off the ground does it turn side to side freely by pushing the tire? Is it power or manual steering?
