Exhaust O2 sensors and gauge???

I built a 408W car with long tube headers. Its carbed. Im trying to figure out what gauge and O2 sensor combo i need to keep an eye on my air/fuel ratio. Do i need a sensor in both sides or will one do? What works for yall? Links if you got em! Thanks for the help in advance!
