On my 04 GT I had the Eibach pro kit.... 3 quarter inch drop front, and 1 inch
drop in the back. Never need CC plates or alignment at all.
What can I expect on the 06 GT???

It would be smart to get an alignment, you should not need camber plates. However, the stock strut mounts are weak and can fail. The rubber blows out and they make a popping noise. If you have enough in the budget, replace them with something like the Steeda HD Strut mount or the GT500 unit. If you are replacing the front struts or springs, then is the best time to replace the mounts.

Can I drop the front 1 inch and not need anything but an alignment?

Yes. Just keep an eye on front tire wear, the factory spec on camber is a pretty wide range.
