For the upper and lower ball joints do I need to put a support to hold up the control arm and keep the spring compressed to remove the ball joints? If so what should i use to support the control arm so the spring does not come loose or extend beyond a point thats fixable?

On a 66' you really don't need any support. The spring will remain in place and the control arm will either fall to the bottom of the shock travel (just like it does when you jack the car up and leave the wheel hang.) If you have the shock out, the upper control arm will rest on the outer part of the frame.

The lower control arm will be no problem either as it will just hang once you separate the joint.
