My 70 Mach is from the Metuchen plant (according to the vin). It looks like the seam sealer used on the floor and around the seat risers is the black spray on undercoating used under the car. It appears original. Did these cars come with spray on seam sealer?

Although my '68 was built in San Jose, it too has black spray on sealer. Although I don't know if it's used on the entire floorpan, it is in the trunk area and under the rear seat, which I have out at the moment.
No telling for sure if the original was brush on or spray. Common applications for the early Mustangs were a brush on application and heavily applied. Was there paint or primer over the sealer?
From what I have heard over the years, it was applied by brush or tube for the early cars. For a 70, I would assume they changed that to a more efficient process so I wouldn't doubt that the possibility exists it was sprayed on.
