I have about 1000 mi. on new Edel Alum heads and I have the valve covers off to adjust the valves (one is ticking). Should I retorque the heads for good preventive measure?

Yes, you should if not already re-torqued. I'm installing the Edelbrock heads/cam package now and the assembly tips state "A head bolt re-torque is recommended after initial start-up and cool-down (allow 2-3 hours for adequate cooling)."

Since I don't know what brand of headgasket was used, I am planning to retorque to 75 ft/lbs. Sound reasonable?

doesnt matter the brand of head gasket, use the factory torque spec, or edelbrocks torque spec if it idifferes from the factory one.

Yes 75 is reasonable... the instructions with mine say final torque is 75 on the short bolts, 75-80 on the long bolts FWIW
