I have seen some springs for my stock 2004 GT from FR and from Eibach. Why such a difference in price? Ford $140, Eibach $260.

I spotted some Ford's on ebay for $100.

How hard is the install? What would a garage charge, you think, for the installation?

Eibach is a little over 200 on ebay. Don't have a shop install them. It is very easy and you can do it yourself in a short time. Shops will probably charge around a hundred bucks.

We recently had a local suspension day at Tarch's house and lowered 4 cars in a matter of a hours using basic tools, nothing really special is needed. Air tools including an impact wrench really help though!

Great!
My 04 gt is bone stock. If I get the FMS or Eibach springs, will I need anything else? Will I need an alignment?

Look into getting C/C plates, 4 bolt is best. Alignment is required a week after installing when the springs have settled.

Looks like I may have to wait on this mod (CC plates, alignment in addition to spring cost), as money is very tight with a 9 month old outgrowing clothes every other week!
