Stalling

I had some minor mods done to my 5.0( gt40 alum heads, 24 lb inj, stage one cam, typhoon intake). I had the car chipped and it runs good except if I've been driving for a while and I stop to get gas or something, when I restart, it starts perfect but when I put it into gear, the car stalls. But if I start the car, let it Idle for about a min. it shifts into gear and away I go. I've replaced the IAC valve with no luck. Any ideas?

See the "Surging Idle Checklist” for help with all your idle/stall problems. You can guess at the problem and throw parts at it, or you can use the checklist to help you find the problem quickly and inexpensively. It’s free and doesn’t cost anything: at last count there were more than 103,000 visits and still climbing

The quick and easy way to dump the codes is in there too, and all you need to do it is a paper clip! The first two posts contain all the fixes & updates. At last count there were 24 possible causes and fixes for surging idle/stall problems. I continue to update it as more people post fixes or ask questions.

Theory: Possible "crap" tune.
There are fuel injection tables which control idle air at startup...and they can be Time and/or Engine temperature (ECT) based... which means the engine needs to run for "so" many seconds and/or at a certain temperature before a revised fuel-map is used.
In your case, load comes into play as well as you state that car will idle, but dies when a load is applied.

You make no mention of the chip or it's origins... so I cannot comment further.

This is a troubleshooting problem and not an ECM tuning problem.
