How is disc brake grease vs. something like white lithium grease?

About the same. The only thing it's really good for is the break-in period while everything gets itself seated.

More is not better and can gum things up when the dust and dirt collects.

Apply a thin coat expecting it to wear off as the parts wear in.

All of the "goo" is not your friend.
 
Disc brake grease is a high temperature, high pressure, synthetic grease and where white white lithium grease is a low to moderate temperature, low to moderate pressure, petroleum based grease i.e. general purpose.

The temperatures in the bell housing can be high when working the drive train so I opt for a grease that will stay where I want it to stay.
 
Replaced all the stuff I mentioned earlier and used high temp disc brake grease. Got the car up and running again today and so far so good!

I also adjusted the clutch to engage closer to the bottom of the range of motion of the clutch pedal so hopefully that will relieve some of the pressure I was putting on stuff by having the cable adjusted tight.
 
My clutch pedal feels sticky when I let it out slowly at low speed conditions like reversing or parking. I already replaced the clutch cable which did not fix the issue. It feels fine when shifting normally and moving the clutch pedal more quickly.

I'm wondering how I can fix this, I was thinking that replacing the bushings in the pedal box might help but I really don't want to pull the pedal box without knowing for sure.
I had the same problem you had and my clutch pedal was also squeaking every time i shifted gears it drove me nuts, got some new clutch pedal support bushings from LMR
https://lmr.com/item/LRS-2471A/79-04-Mustang-Clutch-Pedal-Support-Bushing had them installed and my problems were solved so smooth now and quiet no more squeak.
