Street 351W: 500 CFM too much?

The Holley 350 and 500 are both manual choke, and I don't want to find a place to add that in the dash, so for now I think I'll stick with the Autolite 2100. At some point down the road, I might add a new intake with 600 CFM carb- sounds like that would be the best compromise for what I'm looking for.
 
You can add an electric choke or buy any Holley with it already installed. The carb's the same either way, sort of a modular system. You can swap one or the other from any other Holley or at least from any 4150-4160-2300 series and some others. I personally ditch either choke. Most electrics are trouble and I also don't need or like to add the manual pull cable to the vehicle, but I live in a warm climate. If you want a Holley with an electric choke, buy a maunal carb and I'll send you a box of the electrics I've removed.
