Versailles came from the factory with 14" wheels, I'm pretty sure your existing 14" wheels will work, if not it will be because of a backspacing issue rather than a diameter issue.
 
The center housings varied greatly in strength over the years too. Huge difference from the best ones to the worst, I used to know which ones were which but have forgotten enough of that to not want to make recomendations. The "N"s are the best, and the "WAR"s are about the worst, it gets a bit fuzzy in between.

If you source your chunck from the boneyard ytou're probably looking at a new diff anyhow, so go ahead and get 31s for the peace of mind, that's what I did. The difference on the price of the diff is negligible, it is the new axles that will cost, but they are less than buying a new chunck when it blows up.

Oh yeah, if you are mixing and matching parts make sure either the axle-housing or the diff-housing have a fill-hole. Doesn't matter which or even if they both do, just don't get ones where neither does :D
