Stripping Paint - How To Treat

I'm in teardown mode on my coupe. I had it painted back in 1989 with Imron paint, and while it looked great with little upkeep, it chipped if you looked at it funny. Now I just want to take it down to the base metal and repaint. My question is, knowing that this is going to be a slow process for me due to life, as I peel/sand different panels down to base metal, how can I treat those areas to prevent flash rust (if that would happen) or whatever may happen? Epoxy primer or some other kind of primer? I'm also trying to expose as much rust as possible to repair it now. Again, it's going to be a slow process and I just need to know how to treat the metal between times that I can work on it. Thanks in advance.

Any area that goes to bare metal should be primed with a primer for bare metal,
also known a DTM primer ,direct to metal. Especially if it will be that way for any amount time .Paint stripper is not a good idea as it can get in between panels and will stay there ruining your new paint .If you scrape it off be careful not to gouge the metal. Sanding it off is usually the best bet but be careful not to over heat the metal it will warp, a duel action sander is probably the safest and best way.
The last car i worked on with Imron paint ,it peeled off in sheets when left setting in the hot sun .I almost completely stripped it with my air compressor and a blower nozzle.
