stroker help

i was just wondering i have 2 blocks a 302 and a 351w block, i have a 1988 mustang gt that i would like to build a motor for. im looking for about 500hp i was thinking either 331 or a 408 stroker. if i were to build a stroker could i get away with a cast crank or would i have to go forged? any help would b appreciated thanks
