Keep the OEM one (wishing we still had the OEM one to switch back on my wife's 01). My C&L MAF is collecting dust. The aftermarket MAFs typically aren't any larger than OEM, but flow a bit more freely. the net result of this is (since it uses the stock electronics) is a lean condition, which does make more power, but unreliably and unsafely when mixed with other aftermarket parts and without a tune.
The 85mm MAF, by the way, is for 02+ GTs, the same time Ford increased the MAF size. The 80mm MAF is for 01- GTs. Don't feel shortchanged though, as this is NOT a limitation for your motor. Either OEM MAF is good for 400HP+.
I've got the Accufab Plenum and 70mm TB - these are simply the best pieces, albeit the most expensive. The cost per HP is high, but the quality is great. Take a look at the plenum showdowns at modulardepot --->

Your best gains will be the basics - full exhaust (long tube headers, midpipe, catback), K&N filter, underdrive pulleys, and of course throw in some 4.10 gears...and add a short shifter and you'll be having fun!
