Kit alone is $100 here, but total cost + install would be $330+tax for a clutch kit for the stock system... would I be able to install the trac-loc kit myself (with hand tools)? Is it hard to rebuild? Could a person of limited mechanical knowledge rebuild their own? I dont really want to pay those prices if I can do it myself

The only difficult part is getting the S spring back in place, takes more patience than skill though. Otherwise it isn't difficult. Summit sells the rebuild kit under the FRPP section for around $50. Do a search and you'll find plenty of info on it.

I need to take the Ring and Pinion gear out to do this? So I might as well upgrade to 3.73s while i'm at it, right?

No,
You can do it with the carrier in the housing. You will have to remove the c-clips and carrier pin, pull the axels out some as well as remove the spider gears to get the clutches and plates out and in.
