doing a v-8 swap in a 66 mustang with a c-4 trans for a six but need one for a v-8 what years can i look for that will fit and hook up to a 289

If you want "correct", you'll have to find a 66 Mustang C4. The 65 C4 had internal differences, and of course in 67 the shift pattern changed. If you just want it to fit and work, most C4 from 65 well in the 70's will "fit". If the trans in question was not configured for floor shift, you'll have to install the floor shift selector arm, which will add about $75 to your cost.

what the difference between the c-4 in a six and one for the v-8 besides the bellhousing the torque converter and the flex plate

I'm not a C4 wonk, but IIRC, some internal parts were not as stout in the 6 cyl version.
