Using thicker head gasket to lower compression?

Is this an OK practice? Or is it simply the cheap and wrong way to do it? Basically I would like to run GT40P heads with a #19 cam on a stock shortblock, and then throw a Novi at it. Can I lower the compression using a thicker head gasket, or is this really not recommended. How about some recommendations on what head gasket to use.

I've been told the GT40P will raise compression to roughly 9.6:1 a little more then I'd like to run on the stock shortblock with a Novi-2k where pulleying for anything less than 8psi is difficult.

Besides, don't listen to what people tell you w/o actually MEASURING! If those heads are in the 64cc range you are not 9.6:1.
I do intend to measure before ordering head gaskets, however the GT40p's I'm installing have been worked over and should be closer 60cc's.
