what about a/c, smog pump, bigger stuff like that?

Keep your brake booster. Brakes and steering are two things you don't want to give up... especially on these things. You will need all the brakes and steering you can get. The dogbone on the rear axle is dead weight. Some say it helps dampen vibration but given that you would give up your brakes, Dogbone might be a better option. Fog light brackets, AC system, Smog system depending on your laws, rear seats, stereo(speakers are magnets)... I am not sure how far you want to go with this.

Are you planning on spending some money to reduce the weight or just trying to strip the car. Is this your daily driver or pretty much a track car? I would suggest Aluminium heads. Takes about 40-50 lbs off the front tires but that will cost you a grand easy. Sound deadening, trunk carpet. Relocate your battery to the trunk will offset the weight which is almost as good as removing it.
