I used the timing cover, water pump, water pump pulley, harmonic balancer, crank pulley, and water pump from a 289 for my 393w conversion. Motor mounts will work too. I also used the 289 radiator hoses on my upgraded copper radiator. Normally a 351 will generate to much heat for a stock radiator.
You will need the 351w distributor, alternator brackets, oil pan, oil pump, intake manifolds.
Everything on the tranny side will swap over too.
Alternator brackets should work... Don't know about other brackets if you have PS or AC. I swapped to a 351c from 302 and used everything in that swap, and the W is more like a 289/302 than a C.
If you intend to use your 289 pulleys, the balancer must change too. All 351s came with 4 bolt balancers, while your 289 will likely have 3 bolt.
The big things have already been listed though.
Intake, distributor, oil pan...
Headers usually will not swap either.
They bolt up fine to the engine, however the tubes will often not clear the chassis.
Missed this one...
If your radiator has the passenger side lower hose, like most 289s, then you must use your 289 water pump.
Also should think about the balancer thing too...
All of these considerations on the front of the engine affect other things on the front of the engine.
For example:
If you intend to use your pulleys, you will also need to use the balancer because of the 3 vs 4 bolt pulleys.
So now you are using your 289 balancer with pulleys, so you probably need to change to your timing cover so that you keep your pointer (or pointer location) to match your 289 balancer's timing marks.
Now, depending on which timing cover you have, you may be stuck with the passenger lower type water pump, unless you use aftermarket parts or there is an adapter that I am not familiar with (I am not familiar with much in this area either!).
Anyway, my point is to take all these things into consideration. You don't want to get it put together, then realize that something needs to change. It's aggravation and can cost dough if you already did your shopping.
Your radiator will work on a 351 if it is 3 row.
And after all the above wrinkles have been ironed out.
If you have a 2 row or less, you should seek out an aftermarket 'bolt in' style radiator or at least 3 rows of copper or 2 rows of aluminum.
Again, watch the lower hose location. 351 is on DS, 289 is on PS.

We don't know what year 351 he has, but the 69 351w has a passenger's side inlet and a 3 bolt lower pulley/balancer. Also, it was used for a couple more years on some vehicles, such as some vans.
The front stuff from a 289 will fit newer 351w blocks just fine as long as it is swapped as a complete package--ie waterpump, balancer, timing cover, pulleys. I have all 289 components on the front of my 89' block (which I had originally had on my old 74' block that I installed in the Stang in 1978.)
The 289 alternator brackets will not work on a 351w without some mods. There may be a special head bracket that helps, but I just use the 69' 351w stuff myself which is longer than the 289 brackets.
