From experiance I think that your peak power will be between 5500 and 6000 with that camshaft on that engine, regardless of what is published on their website.

Well, you don't want to shift at peak power, you want to shift after peak power, so if he peaks at 6000 then he'll probably want to shift around 6500

You are correct, you always want to target 500 RPM past your peak power as a rule of thumb, however it does not support running your motor at 7500rpm.

Yes, in this guy's case, he definitely shouldn't be running 7500. Even if it would pull to that high, he's not making optimum power up there and shoudl shift sooner. Most people are over revving their combos IMO.

Well I havent put it on a dyno yet but I need to I guess to figure where my peak power is. One reason I want to up the Rs a bit is because it really feels like it hasnt quit pulling when it hits the rev limit. You can usually tell when a motor quits pulling but this one pulls right up to the limit so I think I can up it and be fine. Also with my gears I am shifting to 3rd right as I hit the traps.

You definitely need to change your gears then. For right now, go ahead and just leave it in second all the way through the traps, and disable the rev limiter, or move it up to around 6700.

But, even if it still feels like it's pulling like nuts, you still may not be making the optimum power. A buddy of mine made a mistake by revving his car 6800 to the rev limiter with a moderate cam. It sure pulled like heck to those R's but when I told him to shift at 6100 he gained 3 tenths and 2mph.

If I'm not mistaken the computer cuts fuel at 6250 (factory rev limiter) not timing like it should. I'd be real careful of running lean at those rpm's.
