What kind of time's is a 99-04 GT full bolt on, 100 shot, 3:73 geared/stall'd auto Capable of? Atleast high 11 low 12?

Also there will be no weight reduction..............

Full bolt-ons with or without cams? I doubt you will be able to break into the 11's without the cams and/or weight reduction. A low 12 is very possible though. Here is a video of a guy that runs at the same track I do. He is running very low 12's with 125 shot and quite a few other mods.

No, there will not be any cams. Stock motor.

12's with a decent tire, 11's with some great driving, weight reduction, chassis stiffening, and clutch/drivetrain mods so you can really launch.

Two questions need to be answered first.
1) What tires / traction will the vehicle have?
2) At what RPM and Trans gear will you start the nitrous?

3.73:1 gears with a 26 inch tall tire
If you leave with the nitrous and have the traction (1.5x 60 foot times) then 12.0's
