Why resurface the stock flywheel, for clutch kit install?

Same reason you get the rotors cut on your brakes.
The disc and the flywheel both wear a pattern into each other, and if you don't resurface it the disc will wear much quicker.
If your flywheel is very high mileage and stress fractured i just recommend a brand new one, the motorsport version is only 100 bucks.
