It's Grilling Time! The Official Stangnet Grill/Smoke Thread

Well I burned the roux on the first attempt and decided to wait till today to try again. It looks awsome and the taste test indicates the same. Cooking rice right now. I'll report back after dinner.

The gumbo was a home run! I'm not cajun and don't claim to be. I lived in the Baton Rouge area for 8 years and have eaten lots of good gumbo. I've cook lots of them too, but the last 3 I've cooked have turned out a cut above. Any gumbo cookers on here I'm sure would love to debate it and if possible have a cook off. That was one of the things I loved about living in south LA. They took their gumbo and jambalaya cooking very serious, and everyone has a secret trick. I must have gained 30 to 40 pounds living down there. If anyone wants my tips and tricks I'd be happy to share.

Dusted off the ol’ Weber grill for the special occasion. The wife surprised me with picking up 2 porterhouse steaks, so I thought I’d surprise her by preparing them over real charcoal instead of gas. Marinated the meat for 24 hours in my own seasoning blend. Seared for 90 sec. Each side, then pulled off to indirect heat until medium rare.

Some olive oil in there, garlic salt, and pepper.

Goes great with, well, anything you can cook on the grill. :) I flip this once and cook the bacon side last. Takes about 30 minutes. This one is a little over 2lbs. You can make it as large or small as you like. One tater per person is a good measure.
 
Hot tip about the recipe above: Even people that do not like asparagus usually like this stuff.

This was how I got my kid to eat it when she was little. She liked it better than the steak. :doh:

It's also [super simple] to pre-pack for a hiking or camping trip. It'll keep un-cooked [days] without issue considering the oil and salt.

Just toss the whole pack on some coals ( or your intake if you gotta drive fer a bit :shrug: ).

This is how REAL men grill......
I was listening to a talk show this morning as the host was speaking to a guy in Maine talking about the 10 cords of seasoned wood he had for heat... The talk show host asked him " whats a cord of wood"...... LOL... The end is near
