Looking into getting some Corbeau gts 2 seats for my Fox. I’ve read people mention they make you sit pretty high. Can anyone who has these let me know, I’m 5’10 am I better off getting the normal or shaved foam with the standard mount?

I’ve linked below the parts I’m looking at buying.

It's [One Inch]. I'm an inch taller than you and wear boots regularly.

The extra inch will allow you to be hair closer to the wheel and not recline as much to get comfortable.

The other thing that comes to mind is that the bolster will still be the same height. So it's your bucket that's an inch deeper. Win Win IMO.

I'd probably leave the pass seat with regular foam.

I used my stock seat brackets( modified, one hole drilled on each slider) for my Corbeau sport seats, and I sit in the same height.

I am 6'-1" and have the shaved seats in my Coupe and regret not getting them shaved for the T-Bird. On mine it is the bottom cushion that is shaved not the back.

Did you get the lumbar option for any of your seats? I got it for my driver seat but I’m wondering if the air pump just dangles there and im gonna have to tuck it in to hide it or if its mounted on the seat hidden somewhere.

You won't have a problem at 5'10. I'm 6'3, run them in my daily unshaved, and only had a problem with the extender seat tracks that add another inch or so. At that point, I was uncomfortably high & contact from the roof while wearing a helmet for auto-x & drag racing was forcing my head to cant and lean forward. With the corbeau brackets/sliders mounted directly to the floor, I'm fine. I do wish I had a tad, a click or two, more leg room. So, extenders & shaved would've been best for me, but I am comfortable and it's close enough that it's not high on my list to address.

Not whining though. I sold my black stockers for ~$500 IIRC and bought the NIB Corbeaus with rear seat covers & brackets/sliders for $800. So, that was a pretty nice trade-off.

There's no question that the Recaro SEs I have in my other car, which look the same or similar to the "Classic LX" they sell now, are better though. Spring for them if ya wanna go another step up. The Recaros sit lower, even with the extender, have more comfy padding, are infinitely adjustible in the back angle, and whereas I can sometimes feel the metal rod in the Corbeaus' thigh bolsters that the padding can shift around, the Recaros don't seem to be built that way and are a smoother bolster. I get the feeling the Recaros are going to wear better, too.
