I just purchased a 1965 Mustang manual transmission (3 speed, 286 engine), my dream car. I am looking for suggestions on what type of pedal extensions to purchase so I can comfortably press the clutch and gas pedals. Apparently everyone in 1965 was quite a bit taller than I am (5' 2).

I don't know where to get the extensions, but it is the smart way to go, as the steering column does not break away in a bad crash on this car. You don't want to sit too close to the steering wheel. I would search for handicap vehicle manufactures. There are other nice but not original steering wheels that are flat which would allow you to have the seat a bit closer to the pedals by re mounting the seat forward some.
