2500rpm fuel cuts off... I think

Ok, sorry if this has been covered before but I'm lost at this point.
About a month ago I was on my way home from work and every time I tried to rev my car above 3000rpm it would just start jerking like it was hitting the fuel cut off. I figured it may have been the weather conditions until I realized that it was a clear sunny day and the humidity wasn't that high.
It didn't do it again until today, when on the way home from work I realized it won't rev above 2500rpm. The humidity in my area is pretty high today and it's about 90 degrees, but the car has run perfectly fine in this weather before. The clutch was just replaced about 600 miles ago, so that's once with the stock clutch and once with the new one.
The coolant light came on too, but I just replaced the coolant about 4 months ago.
Here's the real kicker: it only does it while the car's in gear. Any help would be SO GREATLY appriciated.
Guess it's important to tell you the car too, huh? It's a '99 GT. I have a K&N intake, flowmaster Force II catback, Steeda tri-ax shifter, FRPP 70mm throttle body, Trick Flow intake plenum, and now a Spec stage 2 clutch with the stock flywheel.
 
the pump itself is the most likely cause.. sometimes they go like this. sometimes you will find the screen at the bottom of the pump is loaded with debris and clogged up, even if this is it you want a new pump at that point.

first change the filter if you find you have low presure, then if it's still very low change the pump.
