I'm in the middle of my '89 5.0 to 351w built 408 swap. So i've been gathering a crud load of info. Here's a basic shopping list i put together to use and attached a few links. (I don't wanna infringe on copyright laws) Keep in mind this is my 351w (non roller) to non-a/c 408 stroker (hydr roller/carb setup/no ac)!!!
I re-did everything. You will not have too. So if its already in you engine your probably safe and dont need to change it. Keep in mind you will have a diff setup then mine (carb or efi, roller or non, ac or non). Use at your own discression. If things are missing feel free to post. Enjoy

ac bracket (use stock pump)
bolt set (heavy duty)
cam bearings
camshaft (hydrallic roller)
carburetor (my choice 750cmf)
crankshaft (use stock 351w 3.500) (3.850 393stroker) (4.00 408strocker)
crank pulley spacer
damper 28 oz
damper bolts
distributor (msd or mallory)
distributor gear (steel gear, not bronze or iron-these dont last long)
flywheel 157 tooth/flexplate
flywheel bolts
freeze plugs
fuel pressure regulator (adjustable)
fuel pump (high vol)
braided fuel lines (req to re-route fuel pump to front)
gasket set complete (fel pro high perf)
head bolts (arp)
heads (use stock, i self ported mine)
ignition coil (high perf)
ignition box (msd or mallory)
intake manifold (i went victor jr & self ported)
lifters (for hydrallic camshaft-used stock 302 lifters)
main bearings
main cap studs (for rod beams-apr)
motor mount (solid heavy duty)
trans mount (poly-cause i went solid mtr mnts)
oil pan (find on older 351w vics or marquis, i went 7 qtr moroso)
oil pickup
oil pump (can use stock, but went hv for 408)
oil pumpdrive shaft/heavy duty
piston rings (not req)
pistons (not req, but went forged for my 408)
spark plug wires
power steering bracket (use stock pump)
push rods (not req, but i went hd for 408)
retrofit roller lifter kit (not req, but used to run hyd roller)
rod bearings
rods (not req, but went h-beam forged for 408)
roller rocker studs (not req, but went apr screw types)
roller rockers (not req, but went aluminum)
serpentine pulley set (you should be able to use stock pumps)
spark plugs
starter (mini high torque)
timing chain (double row 3 piece)
valve covers
valve guides (get new if old)
valve springs (get new if old, i went high perf)
valves (get new if old, i went larger)
water neck
water pump (heavy duty)
