I ran a search, but the results were only 4cyl to 5.0L EFI, and 5.0L EFI to CARB swaps.

I checked Fletch's website, which was great! I'll be using that info.

Here's my unique situation, though. My 1991 2.3L is 217,000 running strong, but I'm kind of harsh on the gas pedal and it could blow in a year or less. When it does, I'm putting a 5.0L into it and need to know what is absolutely necessary to get the V8 in and running.

Here's what I can think of that's absolutely necessary

Longblock
CARB and intake
Fuel pump
Regulator
Distributor
T5 input shaft
Bellhousing
Shift Fork
Shift Cable
New Fan
Hoses
Wires
Plugs
Filter
All accessories
Exhaust

Now that's the necessity list, is there anything else?

I'm going to add these to it as money allows, either to the pile of parts, or to the car if the motor blows, will they work?

-5.0L AC manifold, compressor (will the 4cyl condenser, evaporator, and accumulator work?)
-Cruise control, what year vehicle will I need to take it off, and will it work on a carbed car?
-GT T5
-8.8 Rear End

I also have some questions that I need to know.

Will the brakes work properly with the carb setup? Vacuum, etc

What about power steering? The AC itself, does it need the computer left in?

Can I leave the 4cyl computer in to control accessories, even though the motor is carb? I know that I'll most definitely have a CE light, but I could live with that.

The brakes will work as long as all the vaccum hoses are hooked up correctly. Im not sure of this but the 5.0 came with bigger brakes in front(I think).

And another thing to think about is buying the parts aftermarket. IE bigger and better because once you have a 5.0 in her you will already want MORE power. So before you buy stock parts you might want to keep your eyes open for aftermarket and save yourself some cash....
