I've got a basic fan temp switch (flat surface, two rings for zip ties) wired to my fan relay. I had it on the thermostat housing but it was keeping the car to cool. So I moved it so it's pressed up against the bottom of the drivers side rad tank (aluminum griffin) just under the hose... the tank gets flippin hot (obviously) but now the fan wont come on at all... I checked all wiring, all is good. Where do you recommend I put this thing? I may buy a new temp sensor/probe but I'd like to keep the money since I already have this switch...

You'll want it on the intake manifold somewhere. The coolant temperature of the engine rather than the radiator is what should control the fan.

I'm not sure what kind of probe you have but with some of them, it helps to shield the front of the probe (so it's not getting hit with ambient air flow or fan wash). This makes the thing get hotter so it might work better.

If not wanting a more expensive controller, see JRichker's post on a DIY fan switch. The switch he used is very economical.

Good luck.
