I've been researching 2011, '12 and '13 5.0 GT's and I'm interested in performance packages for handling and braking. The Brembo Brake Package seems to only be available on cars with manual transmissions. Why is this? And is it possible to retrofit it to cars with automatics?

You can easily put Brembo's on your Auto. I did mine no problem.
