i have a 2003 gt and i am doing hitech stage 2 cams but i also want to do nitrous, should i go with a plate kit or a nozzle? and what else needs to be done to my fuel system to accomodate it?

IMO, those cams aren't going to work very well with nitrous. Typically with nitrous, you need more exhaust duration. Those cams have less lift and duration on the exhaust side. CMS stage 2's would be a much better choice.

i know there are people that have run nitrous on those cams may not be the best for nitrous i guess is what your telling me but if i were to run nitrous with those cams considering my car will only make around 300 on cams how big a shot of nitrous is still safe on my stock car?

With a good tune, a 100 shot should be safe.

To answer your questions from the original post. A plate kit may be a little simpler to install, but it really boils down to which kit you prefer. Also, I do recommend you upgrading your fuel pump to an SVT Focus pump or a Walbro 255.

i have been looking at the harris speed works plate kit looks nice and cant beat the price anywhere else i think i am going to pick that up. do you run nitrous on your car?

You can go up to 150 shot with a wet system, upgraded fuel to a 255lph, & a tune. You need to pull 2 degrees of timing for every 50 shot of nitrous. Couple of steps colder on your plugs also.

Yes, a generic 255lph pump will not work. There are specific pumps for your vehicle, 98-2004 use the same pumps. Walbro, BBK, Ford SVT all make pumps for that application.
