I'm looking at a road demon carb and not sure what CFM rating to get. here's what I have done.

- Headers, intake, ignition, dual exhaust, gonna add a cam soon as well.

625? or 725?

625cfm is more than enough for a small block that's not seriously modified.
The 351W that I had in my other II had a 600cfm Holley that worked great!
It had very little modding done.
My 302 is got some more serious mods,and I'm running a 650cfm double pumper Holley.

390-525 would most likely give the best power, so of those choices, 625

What 77 sleeper said. The Demon's flow more than what they're advertised at, so for your engine, I'd go with a 525. But of the two choices, the 625 Road Demon.

I run a 750 race demon on my 332". A 725 would be overkill on a 302, unless you plan on making power over 8000 rpm with it.

I ran the 625 road demon on my old setup. Stock engine with a mild cam, and a edelbrock rpm airgap intake. I loved it. Its very easy to tune. It is definitly worth the money.

Id say 625 if you have dual plane intake
lower if you have a single
