Clutch and flywheel

So I got super lucky to find a 1 owner 2000 GT with only 101k on it. So the clutch isn’t gone yet but I want to replace it before it becomes an issue. I am going to do some minor mods. Gears, intake, throttle body, suspension upgrades, lower it just a little, exhaust, and tune but it will be staying N/A and I’m not touching cams.

That being said I was think about exedy mach 350 or McLeod street muscle. I don’t track just the occasional spirited drive through mountains

the stock clutch quadrant is plastic should that be swapped with metal one?

Any general opinions or info is always appreciated

Just get the Ford Racing King Cobra clutch. I've had two in two different cars and it's been fine. The quadrant on the older cars get pretty worn so I'd swap that too.
