Are all of the convertible top boots vinyl? Or is there a higher grade canvas or cloth type?

I've never seen one that wasn't vinyl.

Is there a particular brand of convertible top boot that is better than others? I need to buy one. Just need to decide which one and where to get it.

You can get a canvas as well and it will look better IMO. My top needs to be replaced but I really try to drive with the top up but it lives in a garage. There are not that expensive but I'm not sure you would want to replace it yourself.
