Cooling issue

Been a looooong time away but now I have it back going and have some cooling issues. Issues are at park the temp just keeps going up and up. Slowly but it won't come down or stay in one spot. While driving it goes up to about 190 and hovers between there and 210.

Here is my setup:
302 block .060 over (possible culprit)
griffin aluminum rad
just water for coolant
Electric autozone fan, I think 1200 cfm
180 degree thermostate
Victor water pump

The electric fan doesn't cover the whole radiator, probably about 3/4 from the bottom up. Can't center it on the rad due to the fan motor hitting my water pump pully. I do have a front license plate facia so about 1/4 of the bottom of the rad is blocked by that on the front of the car.

Things I've thought of:
.060 over motor just won't cool
Fan not big enough or not covering enough of the rad
Maybe a 190 Degree thermostate
Thought about removing the current fans shroud and making one to allow me to center it on the rad and cover the entire rad but don't want to do that if the fan isn't going to be big enough anyway.

Probably a different fan would be a start. My Derale 16" moves quite a lot of air. Just purchased a PermaCool 16" for my dads Camaro that is supposed to move 3000 cfm.

Stick with the 180 stat, why would a 190 help? You could play with your ignition timing too. If your too far retarded it will run hot. You could try a high flow thermostat also and see if it helps. Make sure the hoses are collapsing also. You should stay cool though, even at .060.

How old is the radiator?
When was it last cleaned by a radiator shop?
Thermostat is installed correctly?
Have you tried replacing the top and bottom radiator hoses?
Why no coolant? How about trying the Royal Purple Ice?

water transfers heat better than antifreeze.

1200 cfm is about half of what you need.

Was thinking the 190 would allow the water to stay in the rad longer to get cooler before moving through the engine.

Have you tried replacing the top and bottom radiator hoses?

I'm going to take to have it flushed next week probably.

Why would replacing the hoses help?

I've been very happy with my Derale that Summit also sells. Keeps mine plenty cool.

We put this one on our Camaro and it works good, it says it moves 3000 CFM but I really dont think it moves anymore than my Derale. You would think you would notice quite a difference in air flow between the two and there really isnt any IMO.

Maybe FlexLite stuff is over rated, or Derale is under.

I have that same fan and it's really nice. Just get yourself a temperature sensing switch and you're good to go.

Think we found my problem. I put a new flex lite 2500 cfm low-boy fan on it and it kept it from going over 210 but it never would back down. We got out the temp gun and started measuring the inlet out outlet. Well what do you know, the outlet measured 210 degrees and the inlet was measuring 160ish. My pump is pumping the water the wrong way fighting the thermostat. I got a nice polished victor pump that is pushing water up through my radiator instead of down through it.....
