More than enough
Any i4 or v6 car is enough speed and power to get you in serious trouble. Since this is a first car, and you are already talking about nitrous, maybe you should reconsider why your parents don't want you to have an earlier license. We had an incident recently were an 18 yr old and 19 yr old friend were killed near Lopez Lake here in Calif. He was driving a WRX and tried to pass on a double yellow at high speed and lost it. They went off road and into a creek. Sometime you do not get a second chance. Rumor I heard was that he had previously rolled a car, but I can not confirm that. My first ride was a Honda 70, then a 100cc. Then I got a car. I am thankful I did not kill myself on the motorcycle. It seems to almost be a target for cars... anyway, just be careful out there. Take some time to learn your limits, and the cars limits, then cut some slack for the un-expected. In a world of crazy drivers, SUVs, and who knows what in the road, even the best or the best drivers can lose it. A crash at say 120 MPH or 135 is gonna look much worse than 60 to 80 MPH. If I was young again, and was looking for real speed fun, I would consider getting into racing cars. You can practice on track, bend cars you don't own, and have a safer environment to do so. Guess you can go out to some drag tracks for not much money. If ya do have fun. Avoid road racing though, as it is not only unsafe, it could bite back at you for the rest of your life if you do something stupid. And yes, I know old people do stupid things too
Also consider the Miata, if you are not on freeways in the city much. A Miata is fun for back roads. A pretty easy car to learn. It talks to ya, and you get a pretty good idea how it handls and how to drive it within a few months. Oh yeah, one more bit of advice. When you go out and buy a car, be sure to pay cash and not finance it. Try to stay as much debt free in life and you pretty much have it made. No reason to enrich a bank while buying a car.

...anyway, I mean come on, it's bad enough on the six. I'm more than happy with the performance of my auto, even though it gets hated on for being both a six and an auto. I've bested a bone stock Iroc-Z in the quarter (go ahead and flame, it's the truth....I'm proud of that one
. However, I also didn't buy my car to road race. Only occasionally head to the track. It's your first car and you want to use Nos? You ARE going to kill yourself even in a six. As someone mentioned earlier, the six will get you from 0-traffic ticket plenty fast. Nos will get you from 0-DOA even faster. I don't think your friend's Monte Carlo is going to be a problem for you...the Stang definitly wins the weight war on that one. So, I'm going to say go with the six and soup it up some if you'd like. Otherwise, if you get the GT, you'll have a fun time staring at it sitting in your driveway on empty and uninsured only months from repossesion..lol. Whatever you decide, be smart and drive safe 
As for the NOS, well, I don't know if you've priced a kit yet but it sure is alot of money to spend for a conversation piece. You could easily slap you on some nice bolt ons for about the same price and have noticeable, LEGAL power gains..lol. That's what I would do, but that's only my opinion, so take it for what it's worth. It's cool that you're cautious and everything, but getting into a sports car can truly change a person. Someone who is normally very cautious can make just one stupid decision and really screw something up. Just try to keep safety in mind. And I think we all know you aren't looking to be fast and furious...you got the sense of mind to look at buying a Stang, don't ya?
