VECI stands for Vehicle Emission Control Info right? Are there common ressource hubs where I can find this stuff?

AllData at your public library has the EVTM pages to print free in most cases
I just buy the EVTM for the cars I own and use the library for the ones I need to work on

Right, your VECI is the vacuum emissions control information sticker under the hood that also lists the emissions system, California or Federal

Unfortunately, I don't think the '79 underhood emissions decal showed the vacuum line routing like the later models did. An EVTM would probably help you. Or, as @manicmechanic007 pointed out, AllData would be another source of info.

If by trucks you mean pickups, they are nowhere near as popular in europe. Even smaller US pickups like a ford ranger are considered massive around here.And going by the Windsor's wikipedia page there weren't really any models sold in high number with that engine here.
That's more likely yes, it could be a pretty gnarly engine swap.Maybe some of your salvage yards have an Eco-Boost laying around?
Didn't some guy put one in a volvo 240?
It's not as gnarly anymore because of all of the stand-alone, self-learning tuning systems that are popping up now.
No more trying to repurpose an OEM computer and harness.
And it's in my backyard somewhere.... Note to self: don't mess with an orange coupe with a 4 cylinder.

The VECI DID have the vacuum diagram, hence the name Vacuum Emissions Control Information
Pretty damn hard to read, the old ones on the valve cover
Much easier to read when they switched to putting them on the radiator support of the underside of the hood

Here's an UPDATE!
So I removed the original carburator, valves at the bottom were verrry corroded. Hope it's not a sign of the engine's inner state.
Popped the valve covers off, looked fine, turned the engine a few times to make sure every rocker moved along with every valves and conrods
Plunked a battery in, and thus started the electrical shenanigans:
Good news was instantly the warning lights turned on! Bad news is they never turned off!
So that switch is broken I guess. I'm not even sure of how it works, nor if it came stock on foxbodies, if anyone recognise that design...
Thing in the middle is a burnt lightbulb.
Most of the electrical seem out except headlights and like wipers, hopefully thats just from half the fuses being dead.
I also hope they weren't dead because of underlying issues.
That does mean the rear wiper doesn't work yet
When trying to turn the engine I can hear the starter solenoid clacking but nothing happens. Checked the starter's wires under the car and... There's no +?
The only cable I could see was the ground cable. Am I missing something? There has to be a 12v somewhere to power it right? (right?)
Also is there a fuse for the starter ? because it's indicated nowhere on the fusebox panel (which is also broken but I guess glue will fix that):
Right now engine looks like this. I've also started labeling random lines to start and make sense of the mess.
If anyone has tips for dealing with rusted bolts and other things I'm interested as well because that was most of the struggle.
Spent an hour on the oil filter, had to finish it using a metal rod and hammer.

Also any tips on what are the steps to diagnosing a 30yo braking system because I have no idea where to start.
Brake booster has fluid so I guess (?) that means no leaks?
When I press the brake pedal I can hear something like an aspiration noise coming from the large cylinder behind the brake booster.

gnarly is the opposite of rad
