How long to tune ?

Depends on how they do it. The quick way is to adjust the WOT_fuel_multiplier function. This allows them to add y percent more fuel at x rpm.

The other more time consuming way is to dial in the MAF curve. This can take hours, but is a better way of doing it.

My tuning took ~ 2 hours, but Tim gave the car time to cool before he did the final pull's. I'd expect yours to take about the same, but if the chip is already tuned for your setup, and they only do a few pulls for A/F reads, you'll be out in under an hour.

JMS mail order tuned it for me? Maybe this will help me save some time and money

It should, if it's a kit they've run before, they probably gave you a tune off another car. I'd have them do a pull to read the A/F and see how the numbers are. They may need to do some tweaking, which will cost you a few bucks, but you'll have to wait and see how accurate the JMS tune was.
