you have it backwards...carb has faster response than efi.
That’s an opinion… And opinions are like noses…everybody has one.
Until you convert to EFI, you will need to work on carbs. The first thing you need to realize is that a carb is a complex device with more parts than a wind up mechanical clock. The parts all stink like gasoline and are easy to lose or install incorrectly. I have lost more than a few parts in times past and had to take a carb apart a
second time because I misplaced something. People who think carbs are easier to work on than EFI are sadly misinformed. There are much fewer parts to lose, misalign or assemble incorrectly on a 5.0 Mustang EFI than the same performance capability carb.

Do a Goggle search on the make and model carb you have and find the service and overhaul manual for it along with tricks and tips for it. With that in hand, purchase an overhaul kit for your carb and a gallon (or larger) can of soak type carb cleaner that has a basket in it for soaking parts. Remove the carb and disassemble it according to the instructions you downloaded. Soak the parts in the cleaner overnight and the re-assemble with the overhaul kit parts and instructions. If you are lucky or you pray often, you will get it put back together correctly and it will run better than it did before you did the overhaul.
There will be a number of adjustments for choke linkage, secondary throttle linkage, metering rods (GM Quadra Jet) and the accelerator pump. Pay careful attention to the adjustments and how to correctly make them. A misadjusted carb will run poorly, and unlike EFI it won't pop a code to clue you in on what's wrong.
