Is This Something I Should Be Worried About?

Hey all first time posting here been lurking for years tho. Anyways today on my way to work one of the heater hoses burst and i was forced to exit the freeway when the car started to over heat. Towed it home and decided to repair it. Its going well until I remove the upper intake manifold. I notice on the lower intake ports there is a ton of gunk. Just wondering if anyone with more experience with these knows if its the car burning the valves or the oil? Or is it just from mileage wear and tear etc? (140k miles). I'm just worried that this could be damage from it slightly overheating when the coolant spilled out on the freeway. And if it is, should I clean it or whats the best course of action? Would it be detrimental to the car to drive it this way?
