The inside needs the most work so that's probably what I will focus on first. The headliner is stained, the door panels are beat down and the dashboard is cracked and crappy looking.

I saw in a magazine where there are complete interior kits you can buy to make everything look nice....

Any thoughts there?

You will love 5.0 Resto (a.k.a. Late model restoration.) Just be prepaired for sticker shock once you start adding up all of the things you need to get for your car.

Get some leather seats from a 99+ Stang. Call up 5.0 resto and get a new dash, door panals, head liner, and carpet. As far as upgrades, exhaust is the funnest part IMO. There are so many options out there for sounds you have a great chance to really make it your own stang. You got the hard part done already (headers). Now pick from an X or an H pipe and get a nice mandrel bend after cat. Oh and if your in an emissions free county get an o/r pipe...
