The first one is just right.

If you ran the second one, the fan would never shut off once the t-stat opened.
 
Where are you going to get the 198 / 189 switch from?

The 198/189 switch comes from a late 70s VW, it uses a M22 thread so you'll need to get a 3/4 drill bit and a M22-1.5 tap.

I've been running a 200-185 GM style switch on a Taurus fan for two weeks now and I'm very pleased with the set up. It uses an easier to find 3/8 npt thread tap. Mine always activates at 195-188 everytime.

I bought the switch from Mid America Motorworks the switch and the harness is only $20. 1981-91 Low Temperature Electric Cooling Fan Switch - Mid America Motorworks
 
I have a 180 thermostat BTW; the switch I have listed and the GN switch (if its really a 203-187 ?) is made for a 180 thermo.

I also found a place where you can get a GM style 210-200 switch for a 195 thermostat.
