Motor dies when Volt meter jumps around and winds up at 11 Volts

Well after over 3 grand I have my overheating issues solved. Also had a bad gauge and n the process and I put a new carb in and it is tuned fine but my volt meter keeps jumping around on me and when it hits around 11 volts the car starts dieing out on me. You'll had these issues ? We did convert the distributor from pints to electronic. Alternator is about 5 years old. thanks.
