Multiple sets of cats: two 3-ways inline. Any benefit

Just wondering if one is good, would two work even better? I have a carbed 91 and I didnt get sniffed this year but next year I might not do so well. I have all the stuff hooked up like airpump and pcv and even the charcoal...all but egr. I cannot make egr work with my carb. It occured to me that well, with catco converters in 2 1/2 trim selling for 35 bucks on ebay, I should get a second set for my "inspection time" pipe and have 2 cats catting away PER SIDE. I dont care about the performance aspect (backpressure) since this is the inspection time only pipe.

I put my open prochamber in and no matter how much I tune the idle screws on the holley, she stinks at idle. It either doesnt run or it stinks. Would dual cats on each side make rosepetals come out the back or have no real further effect beyond the first set?
